Quick-Cheat Italian Scones

These are called "quick-cheat Italian scones" because there really is no cooking required, only stress-free eating! It's a matter of assemble, grill and enjoy. I use good quality, bakery-bought butter scones that can be stashed in the freezer and are ready at a moment's notice!

Ingredients
  

For the scones

  • 6 good quality butter scones (thawed if previously frozen, halved)
  • 3 tbsp butter (melted)
  • 2 salad tomatoes (sliced thinly)
  • 2 cups mozzarella (grated)
  • 1 tsp dried oregano
  • ¼ cup fresh oregano (finely chopped)
  • salt & pepper to taste

Instructions
 

  • Preheat the oven to 180° with the grill/ broiler on medium heat.
  • Using a sharp knife, halve the scones. If you're using frozen scones, allow them to thaw completely. Melt the butter and dried oregano together. Using a kitchen brush, generously butter the scones.
  • Slice the tomatoes into slices of about 0.5mm thick. Lay onto the scone halves. Generously pile on the grated mozzarella and grill gently until the cheese is melted and the scones are warm through. This only takes about 6-7 minutes. Be careful not to let the cheese or scones burn under the grill!
  • Sprinkle with fresh oregano. If you only have dried oregano or other Italian herbs, use it! Serve warm with tea.
